DIY 2 Ingredient Gluten Free Goldfish Crackers
I am super excited about this recipe. Remember my Homemade Cheddar Cheese Crackers recipe? I wanted to try a gluten-free version, and after many experiments with gluten-free options, I found almond flour to work best. I didn’t need to use salt or butter this time, my DIY 2 Ingredient Gluten Free Goldfish Crackers came out perfect with only 2 ingredients: almond flour and cheese.
If you want to give your kids healthy snacks and avoid dangerous chemicals, GMOs, and artificial flavors, then this recipe is just what you need. My son loves crackers. Take them to the park, to school (if you don’t have a nut-free policy), or just enjoy them at home.
We’ll get to the recipe in a moment, but first I want to answer a question that a friend asked me. “What’s wrong with the plain old store-bought fish-shaped crackers? They can’t be that bad, right?” I thought that was definitely worth discussing.
What’s wrong with store-bought Goldfish crackers?
If you’ve read any of my other posts, you know that I’m not a fan of giving kids over-processed snacks. Now, to be fair, Pepperidge Farms, the makers of Goldfish-brand crackers, have really made major strides in creating more wholesome crackers. They’ve eliminated GMO products, artificial colorings, and even fake flavorings. However, ANY cracker that comes in a bag involves some sort of processing. Period.
Store-bought crackers also contain added salt, sugar, oils, and more. Plus, they’re not gluten-free. Bottom line, no matter how much progress a brand makes towards creating better snacks for kids, they’ll never offer the same nutrition as homemade versions. They certainly will never come close to just using two ingredients. Seriously, when it’s THIS easy to make something healthier yourself, there’s really no reason not to!

Homemade Goldfish Crackers (2 Ingredients Only)
For this Homemade DIY 2 Ingredient Gluten Free Goldfish Crackers recipe I am only using 2 Healthy Ingredients. Yes, only 2 ingredients and you have perfect, super delicious crackers. I can’t describe the wonderful texture, the smell of the crackers coming out of the oven, and the “cheesy” yummy taste. Simply amazing!
It’s all about simple recipes made with healthy ingredients. You can make these crackers in less than 30 minutes. All you need is a Fish Cookie Cutter (or use other fun cutters like heart cutter for Valentine’s Day), Almond Meal Flour, and a good quality hard cheese (gouda or parmesan works great). Make sure you use quality ingredients: organic almond flour, and cheese. Ingredients you simply won’t find in commercial crackers.
You also need Parchment Baking Paper. A Food Processor or blender is also needed to mix the ingredients. I used my Vitamix. Check out the Amazon list below for my recommendations.

What if you prefer the flavored versions of the store-bought crackers, though? Let’s look at some options for alternative cheeses as well as spices to add.
How to make different flavors of homemade fish-shaped crackers
I used Gouda in my crackers, but you can try other cheeses instead. The key is to go with hard cheese because the flavors incorporate better into the almond flour. Some good options include:
- Pecorino Romano (make sure you’re getting the real goat-milk aged version)
- Gorgonzola (this one is definitely an acquired taste, but perfect for adults)
If you’re willing to add a few extra ingredients, spices also work well. Just toss them into the mix. Some good options:
- Garlic- use either fresh or powdered, but not garlic salt
- Basil and/or oregano- goes great with parmesan cheese
- Thyme- works well with goat cheeses
- Chili powder or red pepper
I can’t give you exact measurements on how much spice to add, as each one is different. For spicy spices, like chili powder, I’d start with maybe half a teaspoon. If it’s not strong enough, you can always add more next time. For milder spices, I’d start with more, like a full teaspoon.
The longest and hardest part of making these crackers is cutting them into shapes. So, you could always experiment with a batch and just cut it into squares to save time. If you like the flavor, next time go the extra mile and cut them into fish shapes. Or not. Totally up to you!
What if you’re allergic to almond flour?
One last note before we get to the tutorial. While almond flour is the easiest gluten-free flour to work with for these crackers, I do have friends who are deathly allergic to every single type of nut on the planet.
I can’t attest to the results of using other flours, but I did find a few alternatives that should work well. All of these are 1:1 ratios for almond flour. In other words, where my recipe calls for one cup of almond flour, you can swap it with one cup of these.
- Pumpkin seed meal, which has a similar nutty flavor
- Cassava flour -a keto-friendly and paleo-friendly alternative
- Plaintain flour
Out of those three, I’d go with the pumpkin seed meal, since it has the closest flavor profile. Plaintain and cassava flour are both pretty bland, which makes them great when they’re a supporting ingredient but not so much when they’re one of two starring ingredients.
DIY Goldfish Crackers Video Tutorial
Delicious and healthy snack idea for kids and adults. Gluten Free version and only 2 healthy ingredients.
- 1 cup almond flour
- 1 cup grated Gouda cheese (or any other hard cheese)
- Preheat oven to 375 degrees.
- Place the 2 ingredients in a Food Processor and pulse several times to combine.
- Take the dough out of the food processor and form a big ball with your hands to incorporate well. The dough generally comes out fine, but you may need to add a little bit of water (just a few drops) if your dough is not well formed.
- Roll out dough on top of Parchment Paper. You don’t want it too thin because the crackers could break easily. Cut in fun shapes with your favorite cookie cutters or if you don’t have any, just cut in little squares with a knife.
- Bake for about 10-12 minutes until golden brown. Mine are perfect in exactly 12 minutes. I bake the crackers on top of parchment paper, greasing it with a little bit of butter to prevent sticking.
- Enjoy them while they last.
